| HEART OF THE SOUTH FRIED OKRA |

4 to 6 servings1 pound okra 1 cup cornmeal 1/2 cup CRISCO all-vegetable shortening or 1/2 CRISCO Stick Salt and freshly ground pepper Rinse okra. Remove caps. Cut pods into one-half inch slices. Toss with cornmeal. Heat Crisco to 365ºF in electric skillet or on medium-high heat in large heavy skillet. Fry single layer of okra about 8 to 10 minutes or until golden brown on all sides. Do not overcook or okra will become too soft. Turn carefully. Drain on paper towels. Sprinkle with salt and pepper. Serve immediately. |
