| CRISP FRIED SWEET POTATOES |

6 servingsCRISCO Shortening for deep frying 6 medium sweet potatoes (about 2 pounds) Heat 2 or 3 inches Crisco Shortening to 365ºF in deep fryer or deep saucepan. Wash and pare potatoes. Cut lengthwise into strips about 1/2 x 1/2 inch or 1/4 x 1/4 inch. Pat dry with paper towels. Fry, a few at a time, about 3 minutes for 1/2 inch strips or 1-1/2 minutes for 1/4 inch strips or until crisp and golden. Drain on paper towels. Salt lightly. Serve immediately. |
