ALMOND SOUP Print E-mail
6-8 Servings

6 tablespoons CRISCO Oil ,divided
1/3 cup unblanched whole almonds, ground
4 slices bread, toasted, crusts removed, cut into 2x1/2-inch strips
1/2 cup sliced almonds
3 cans (10-1/2 ounces each) beef consomme
3 cups water
1/4 teaspoon almond extract
Grated Parmesan cheese


Combine 3 tablespoons Crisco Oil and ground almonds in small bowl. Set aside. Heat remaining 3 tablespoons Crisco Oil in medium skillet. Add toast strips and sliced almonds. Cook over moderate heat, stirring frequently, until almonds are lightly browned. Set aside.
Combine beef consomme and water in 2-quart saucepan. Heat to boiling. Stir in ground almond mixture and almond extract. Ladle into bowls. Top with toast mixture. Sprinkle with grated Parmesan cheese, if desired.
