Preparation Time: 15 minutes Total Time: 50 minutes 4 servings2 tablespoons CRISCO Oil 6 scallions (trimmed and thinly sliced) 1 teaspoon jarred minced garlic (or 1 small garlic clove, peeled and minced) 1 to 2 teaspoons chili powder 1 pound ground beef 3/4 cup crushed corn chips 2/3 cup bottled chili sauce, divided 1 egg, lightly beaten 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper Heat oven to 375ºF. Line 13 x 9 x 2-inch pan with heavy duty aluminum foil. Heat Crisco Oil in medium skillet on medium-high heat. Add scallions and garlic. Sauté 2 minutes. Add chili powder. Sauté 1 minute, or until scallions are translucent. Scrape mixture into mixing bowl. Add beef, crushed corn chips, 1/3 cup chili sauce, egg, salt and pepper to scallion mixture. Mix well to blend. Form mixture into loaf shape in prepared pan. Spread remaining 1/3 cup chili sauce on top of loaf. Bake at 375ºF for 30 to 40 minutes, or until juices run clear when center is pierced with small knife. Note: The meatloaf can be prepared for baking up to one day in advance and refrigerated, tightly covered with plastic wrap. Add 10 minutes to baking time. |
