4 Servings1/4 cup CRISCO Shortening 4 split chicken breasts (2 pounds) 1 cup undiluted evaporated milk 2 tablespoons honey 1 teaspoon salt 1/4 teaspoon ground nutmeg 1/8 teaspoon ground allspice 1 can (16 ounces) sweet potatoes in syrup, drained Preheat oven to 350ºF. Melt Crisco in a large heavy skillet over medium-high heat. Add chicken breasts and cook until golden brown, turning as needed. Drain on paper towels. Arrange chicken in a greased 2-quart baking dish. Combine evaporated milk, honey, and seasonings; pour over chicken. Bake at 350ºF for 10 minutes. Remove from oven and arrange sweet potatoes around chicken. Spoon sauce over all. Return to oven and bake for 30 minutes or until chicken is tender. |
