| SAUTÉED PORK WITH SPICED TOMATO SAUCE |

Preparation time: 15 minutes Total time: 35 minutes 4 servings3 tablespoons CRISCO Oil 1-1/2 pounds lean pork (such as tenderloin or loin roast), trimmed of fat and cut into 1-inch thick slices 1 large onion, peeled and diced 2 teaspoons jarred minced garlic (or 1 large garlic clove, peeled and minced) 1 can (8 ounces) tomato puree 1/2 cup water 1 teaspoon ground coriander 1/4 teaspoon nutmeg 1 pinch ground cloves 1/4 teaspoon salt 1/4 teaspoon freshly ground black pepper Heat Crisco Oil in 10 or 12-inch skillet on medium-high heat. Pat pork with paper towels. Add pork slices to pan. Brown on both sides. Remove with tongs. Set aside. Reduce heat to medium. Add onion and garlic to pan. Cook 2 minutes, or until onion is translucent. Add tomato puree, water, coriander, nutmeg and cloves to pan. Simmer 10 minutes. Return pork to pan, along with any juices that accumulated. Simmer 15 minutes, covered or until pork is no longer pink in center. Season with salt and pepper. Serve immediately. Note: Boneless, skinless chicken breasts or boneless pork chops can be cooked in same fashion. The dish can also be made up to two days in advance and refrigerated, tightly covered. Reheat it on low heat until hot just prior to serving. |
