| RICE WITH PEAS |

2 tablespoons Crisco Pure Canola Oil or Crisco Vegetable Oil 2 -3 cloves minced garlic 1/2 cup chopped onion 1/2 cup chopped red bell pepper 1/4 cup chopped celery 1 -1/2 cups water 1/2 cup white wine 1 10-oz. package frozen peas (deluxe tiny, if possible) 1/2 cup chopped ripe tomato 1/2 teaspoon salt 1/8 teaspoon pepper 1 cup uncooked long grain rice 1/4 cup chopped Italian flat leaf parsley In a 2-1/2 to 3-quart saucepan, heat the Crisco Oil over medium heat and sauté the garlic, onion, bell pepper, and celery until soft. Add the water and wine, raise the heat, and bring to a boil. Add the frozen peas, tomato, salt, and pepper, and allow to return to a boil. Stir in the rice, cover, reduce heat to low, and cook until the rice is done (about 12-15 minutes). Add the chopped parsley, stir, and fluff with a fork. |
