| POTATO PANCAKES |

6 to 8 servings2 cups grated raw peeled potatoes 4 egg whites 1 tablespoon flour 1-1/2 teaspoons salt 1/8 teaspoon pepper CRISCO Oil for frying Grate potatoes in blender. Remove and drain off excess liquid. Put 1/2 cup potatoes, egg whites, flour, salt, and pepper back in blender. Blend about 2 minutes. Combine with remaining potatoes. Fry thin pancakes in hot oil until golden brown. |
