This is one of her most requested recipes. 4 Servings8 boneless, skinless chicken breasts zest of 1 lemon juice of 2 lemons 1/4 cup CRISCO Vegetable Oil 8 finely minced garlic cloves 1 tablespoon fresh parsley 1 tablespoon fresh thyme 1 tablespoon fresh oregano 1 tablespoon fresh chives 1/2 teaspoon salt 1/2 teaspoon black pepper Rinse chicken and pat dry. Combine the zest of lemon, juice of lemons, Crisco Oil, garlic, thyme, parsley, oregano, chives, salt and black pepper in a large flat dish. Add chicken and cover. Refrigerate overnight. Remove chicken from marinade. Discard marinade. Spray cold grill with CRISCO No-Stick Cooking Spray before grilling to prevent chicken from sticking. Grill chicken. Serve with slices of grilled vegetables drizzled in Crisco Oil and sprinkled with salt and pepper. Garnish with roasted garlic, herb sprigs and lemon slices. |
