PAN-FRIED FISH FILLETS Print E-mail
4 to 6 servings

1-1/2 to 2 cups corn flake crumbs
1 teaspoon salt
1/8 teaspoon pepper
3/4 to 1 cup milk or evaporated milk
1 egg
1-1/2 pounds fish fillet, about 1/2 inch thick, cut into serving-size pieces
1/4 cup CRISCO all-vegetable shortening or 1/4 CRISCO stick


Combine corn flake crumbs, salt and pepper on waxed paper.
Combine milk and egg in shallow dish or pie plate. Stir to blend. Dip fillets in mixture. Coat with crumbs.
Heat Crisco to 365ºF in electric skillet. Add a few pieces of fish. Fry for about 2 or 3 minutes on each side or until golden brown. Turn as needed for even browning. Add more shortening if needed.
Drain on paper towels. Serve immeditely.
