| PAN-FRIED CHICKEN |

Makes 4 servings3/4 cup flour 1 teaspoon salt 1/4 teaspoon pepper 1 frying chicken (2-1/2 to 3 pounds), cut up or use chicken pieces 1/3 cup plus 2 tablespoons CRISCO In paper or plastic bag, combine flour, salt, and pepper. Add chicken, a few pieces at a time; shake to coat. Preheat Crisco in electric skillet to 365ºF, or use medium-high heat of range. Add chicken; fry, uncovered, 30 to 40 minutes, without lowering heat. Turn chicken 4 or 5 times during frying for even browning. |
