| OVEN ROASTED CHICKEN BREASTS |

4 Servings2 whole chicken breasts, split in half and skinned Salt and freshly ground pepper 3 tablespoons CRISCO Shortening 1/2 teaspoon dried rosemary leaves 1/4 teaspoon thyme leaves Preheat oven to 350ºF. Trim excess fat from chicken. Sprinkle lightly with salt and pepper. Heat Crisco in large ovenproof skillet. Add chicken. Sauté over moderate heat until golden brown and chicken near bone is no longer pink. Sprinkle with rosemary and thyme. Place skillet in oven or transfer to casserole dish. Roast at 350ºF for 5 minutes to brown the top of the chicken. |
