| ORZO WITH CHICKEN AND GARDEN VEGETABLES |

Prep time: 10 minutes Cook time: 16 minutes Serves 43 tablespoons CRISCO Corn Oil 1 large onion, finely chopped 4 garlic cloves, minced 1 red bell pepper, seeded and diced 1 can (14-1/2 ounces each) chicken broth 2 cups broccoli flowerets, cut into bite-size pieces 3/4 cup uncooked orzo pasta 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces 1 -1/2 cups fresh or frozen corn kernels Salt and pepper to taste 3/4 cup grated Parmesan cheese Heat oil in large skillet with a lid over medium-high heat. Add onion, garlic and red bell pepper. Cook for 2 minutes. Add broth, broccoli and orzo. Reduce heat to medium. Cover; cook for 6 minutes, stirring occasionally. Add chicken, corn and salt and pepper. Cook for 8 minutes more. Remove pan from heat. Gently stir in cheese; serve immediately. |
