8 servings This is fantastic with a big bowl of cole slaw and some corn muffins!6 yams 1/2 cup Butter Flavor CRISCO 3 tablespoons cornstarch 3/4 cup sugar 1 teaspoon salt 2 cups water 3 tablespoons lemon juice 1 teaspoon grated lemon peel 1 cup raisins 6 large apples, peeled and sliced 2 cups cooked ham, cubed or sliced Peel 6 yams and slice in 1/2-inch slices. Cover with water and boil for 20 minutes. Meanwhile, melt 1/2 cup Butter Flavor Crisco. Stir in 3 tablespoons cornstarch, 3/4 cup sugar, and 1 teaspoon salt. Cook together a minute or so and stir in 2 cups water, 3 tablespoons lemon juice, and 1 teaspoon grated lemon peel. Cook together until thick and stir in 1 cup raisins. Grease a 9 x 13-inch glass pan with Butter Flavor Crisco and cover the bottom with 6 large apples peeled and sliced. Layer the cooked yam slices on top of the apple slices. Cover the yams with about 2 cups leftover ham (cubed or sliced). Pour the sauce over all and bake at 350ºF for 1 hour. |
