| NUTTY FISH FILLETS |

Preparation Time: 10 minutes Total Time: 25 minutes 4 Servings 3 tablespoons CRISCO Oil, divided 1 pound fish fillets (such as salmon, flounder, grouper, sole, or snapper), cut into 4 servings 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1 tablespoon Dijon mustard 1 tablespoon honey 1/2 cup chopped pecans 1/4 cup breadcrumbs Lemon wedges for garnish, optional Heat oven to 450ºF. Oil 13 x 9 x 2-inch baking pan with 1 tablespoon Crisco Oil. Rinse fish. Pat dry. Sprinkle with salt and pepper. Arrange in baking pan. Combine remaining 2 tablespoons Crisco Oil, mustard, and honey in small bowl. Brush mixture on fish fillets. Combine pecans and breadcrumbs. Pat mixture on top of fish. Bake at 450ºF for 10 minutes, or until fish flakes easily when tested with fork. Garnish with lemon wedges, if desired. Note: Boneless skinless chicken breasts pounded to an even thickness of 1/4 inch can be cooked in the same way. |
