Makes One 9-inch pie 8 ServingsCRUST 9-inch Classic CRISCO Single Crust 1/4 teaspoon crushed red pepper FILLING 1 pound lean ground beef 1 package (about 1.25 ounces) taco seasoning mix 3/4 cup water 1 bottle (8 ounces) mild taco sauce, divided 1 can (8 ounces) kidney beans, drained 2 medium fresh tomatoes, chopped 2 cups shredded lettuce 1 cup (4 ounces) shredded sharp Cheddar cheese 1/2 cup dairy sour cream For crust, prepare (see Classic Crisco Pie Crust recipe), adding red pepper to flour mixture. Bake and cool. Prepare filling while crust bakes. For filling, brown ground beef in large skillet. Drain off excess drippings. Stir in taco seasoning mix, water and 1/3 cup taco sauce. Bring to a boil. Reduce heat. Simmer 10 minutes. Add beans. Simmer 5 minutes. Place beef mixture in baked pie crust. Sprinkle with some of the tomatoes, lettuce and cheese. Top with dollops of sour cream. Cut in wedges. Serve with remaining taco sauce, tomatoes, lettuce, cheese and sour cream. Refrigerate leftover pie. |
