| MEAT PATTIES WITH ZUCCHINI CHEESE STUFFING |

4-6 Servings2 tablespoons CRISCO Shortening 1-1/2 cups shredded zucchini 3/4 cup shredded Cheddar Cheese 1/4 cup dry bread crumbs 1-1/4 teaspoons salt, divided 2 pounds ground beef 1/2 teaspoon dill weed 1/4 teaspoon pepper 1 can (8 ounces) tomato sauce Preheat oven to 350ºF. Melt Crisco in a large skillet. Add shredded zucchini and cook over medium heat for 3 minutes or until tender. Add cheese, bread crumbs, and 1/4 teaspoon salt; mix well. Set aside. Combine ground beef, remaining 1 teaspoon salt, dill weed, pepper, and 1/2 cup tomato sauce. Reserve remaining tomato sauce. Press half of ground beef mixture into 8 x 8 x 2-inch pan. Spread zucchini-cheese mixture on top. Shape other half of beef into four square patties and place on zucchini layer. Pour remaining 1/2 cup tomato sauce over meat. Bake uncovered at 350ºF for 1-1/2 hours or until thoroughly cooked. Cut into desired serving sizes, lift up with a slotted spoon, and allow the patties to drain slightly. Serve immediately. |
