Prep time: 10 minutes Cook time: 10 minutes 4 to 6 servings2 tablespoons CRISCO all-vegetable shortening or 2 tablespoons CRISCO Stick 1 clove garlic, minced 1 small onion, thinly sliced 1/4 teaspoon dried oregano leaves 1/4 teaspoon dried marjoram leaves 2 cups julienne-cut zucchini 1 14.5-ounce can diced tomatoes, drained 2 tablespoons sliced pitted black olives (optional) 1/2 teaspoon salt 1/8 teaspoon pepper 2 tablespoons grated Parmesan cheese Melt Crisco Shortening in large skillet. Add garlic, onion, oregano and marjoram. Sauté over moderate heat for 2-3 minutes. Add zucchini; sauté 5 to 6 minutes, or until tender. Stir in tomatoes, olives, salt and pepper. Cook until heated through. Garnish with Parmesan cheese. |
