| HERB-MARINATED PORK ROAST |

6-8 servings3-1/2 to 4-pound bone-in pork loin roast 1 small onion, chopped 1/2 cup CRISCO Oil 3 tablespoons cider vinegar 1 tablespoon lemon juice 1 teaspoon dried oregano leaves 2 cloves garlic, minced 1/2 teaspoon dried rosemary leaves 1/4 teaspoon dried dill weed 1/4 teaspoon salt 1/4 teaspoon pepper Place roast in large bowl or large heavy plastic food storage bag. Blend remaining ingredients. Pour over roast. Cover dish or seal bag. Refrigerate 8 hours or overnight, turning roast over occasionally. Preheat oven to 325ºF. Remove roast from marinade. Discard marinade. Place roast in roasting pan. Roast at 325ºF, 2 to 3 hours, or until internal temperature registers 170ºF. Let stand 15 minutes before carving. |
