| HAMBURGER ONION CUPS |

6 Servings1-1/2 pounds lean ground beef 1 egg, slightly beaten 2 tablespoons dry bread crumbs 1/2 teaspoon salt 1/4 teaspoon pepper 2 small onions, peeled and sliced in thirds Cheese Sauce: 2 tablespoons CRISCO all-vegetable shortening or 2 tablespoons CRISCO Stick 2 tablespoons all-purpose flour 1 cup milk 3/4 cup shredded sharp Cheddar Cheese 1/4 teaspoon salt Dash white pepper Preheat oven to 350ºF. Combine ground beef, egg, bread crumbs, salt, and pepper. Line 6 custard cups (6 ounces each) with 1/2 cup of meat mixture; make a depression in the center of meat and press an onion slice in center of each humburger cup. Place custard cups on a baking sheet. Bake at 350ºF for 25 minutes. For cheese sauce, melt Crisco in a saucepan. Add flour and cook for 1 minute or just until bubbly. Add milk gradually, stirring constantly. Cook and stir for 3 minutes or until thickened. Add cheese and stir until melted. Season with salt and white pepper. Remove from heat; cover and keep warm. Remove meat cups from custard cups with slotted spoon; drain off fat. Spoon 2 tablespoons of cheese sauce over each meat cup. Serve with remaining cheese sauce. |
