Makes 3 to 4 servings Prep time: 10 minutes Cook time: 5 minutes1 pound fresh or frozen fish fillets 1 pound potatoes, peeled (about 3 potatoes) Crisco for frying 1/4 cup flour 1/2 teaspoon salt 1 egg yolk 2 tablespoons water 1 tablespoon Crisco, melted 1 egg white, stiffly beaten 1/4 cup flour Malt vinegar, if desired Thaw fish if frozen. Cut into serving-size pieces. Cut potatoes in uniform strips, slightly larger than for French fries. In medium bowl, combine 1/4 cup flour and salt. Make a well in center; add egg yolk, water and melted Crisco. Stir until batter is smooth. Fold in egg white. Dip fish in remaining 1/4 cup flour, then into the batter. Melt Crisco in skillet to about 1/2 to 1-inch deep and heat to 365ºF. Fry potatoes first until golden brown. Then fry the fish on both sides until golden brown (add more Crisco to skillet if some lost during potato frying. Drain potatoes and fish on paper towels. Sprinkle fish and chips with salt. To serve, sprinkle fish with malt vinegar, if desired. |
