FISH AND VEGETABLE BROIL Print E-mail
4 to 6 servings

1/4 cup CRISCO all-vegetable shortening or 1/4 CRISCO stick
1 small onion, chopped
1/2 cup chopped celery
1/2 cup chopped green pepper
1 large tomato, seeded and coarsely chopped
2 tablespoons seasoned fine dry bread crumbs
1/4 teaspoon garlic salt
1/8 teaspoon pepper
1 to 1-1/2 pounds fish fillets, about 1/2 inch thick, cut into serving-size pieces
1/4 cup grated Parmesan cheese


Preheat oven to broil and/or 550ºF. In small skillet melt Crisco. Add onion, celery and green pepper. Cook and stir over medium heat until tender. Stir in tomato, bread curmbs, garlic salt and pepper. Remove from heat. Set aside.
Broil fish on both sides according to directions for Broiled Fish Fillets, above. Divide and spread vegetable mixture over broiled fish. Sprinkle with Parmesan cheese. Broil 6 inches from heat for 2 to 4 minutes longer, or until golden brown.
