| CRISPY CRUMB FRIED CHICKEN |

4 servings2/3 cup finely crushed herb-seasoned stuffing mix 3/4 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon paprika 1 frying chicken (2-1/2 to 3 pounds) cut up or chicken pieces 1/2 cup CRISCO Shortening Combine stuffing mix, salt, pepper and paprika on waxed paper. Moisten chicken with water. Coat with crumbs. Heat Crisco to 365ºF in electric skillet or on medium-high in large heavy skillet. Fry chicken. Turn once for even browning. Reduce heat to medium-low. Cook chicken for 30 minutes or until tender. Turn once for even browning. Drain on paper towels. |
