9 servings3/4 pound boneless, skinless chicken 3/4 teaspoon salt, divided 1/2 teaspoon plus 1/8 teaspoon pepper, divided CRISCO No-Stick Cooking Spray 1 tablespoon CRISCO Oil * 1 cup frozen chopped broccoli, thawed and drained or cooked fresh broccoli 10 eggs, well beaten 1 cup (4 ounces) shredded Cheddar Cheese, divided 2 green onions, chopped 3 tablespoons milk 1/4 teaspoon Italian seasoning *Use your favorite Crisco Oil product. Rinse chicken; pat dry. Dice finely. Season with 1/4 teaspoon salt and 1/8 teaspoon pepper. Heat oven to 350ºF. Spray 8-inch square nonstick pan with cooking spray. Heat oil in large skillet on medium-high heat. Add chicken. Sauté about 5 minutes or until chicken is no longer pink in center. Combine broccoli, eggs, 1/2 cup cheese, green onions, milk, remaining 1/2 teaspooon salt, 1/2 teaspoon pepper and Italian seasoning in large bowl. Stir in chicken. Pour into prepared pan. Bake for 20 to 25 minutes. Sprinkle with remaining 1/2 cup cheese. Bake 5 to 10 minutes longer or until set. Cut into 9 squares. |
