| CARIBBEAN STEWED CUCUMBERS AND TOMATOES |

Makes 2 to 4 servings2 tablespoons Crisco Pure Canola Oil 3-4 cloves chopped garlic 1 cup chopped onion 1 red bell pepper, seeded and chopped 4 medium cucumbers, peeled, halved and seeded, cut into 1-inch pieces 2 cups chopped ripe tomatoes 1/4 teaspoon granulated sugar Salt and Pepper 1 teaspoon fresh lime juice 1/4 cup chopped scallions In a large, non-reactive saucepan, heat the Crisco Pure Canola Oil over medium heat. Add the garlic, onion, and red bell pepper. Sauté until just soft. Add the cucumber, tomatoes, sugar, and salt and pepper to taste. Stir well to combine. Bring to a simmer and cook until the cucumbers are just translucent. Add the lime juice and scallions. Stir and taste. Add salt and pepper if desired. Serve as a side dish or over cooked rice as a main course. Enjoy! |
