| BROILED SALMON STEAKS |

6 Servings6 salmon steaks, cut 1-1/4 inches thick 3/4 cup sauterne or other cooking wine 1 tablespoon white wine vinegar 1-1/2 teaspoons soy sauce 1 tablespoon finely chopped green onion 1/4 cup CRISCO all-vegetable shortening or 1/4 CRISCO stick Rice Lime slices Curled onion tops Rinse salmon steaks and pat dry. Arrange in a large shallow dish. Blend sauterne, vinegar, soy sauce, and green onion and pour over salmon steaks. Cover and marinate in refrigerator several hours or overnight, turning occasionally. Drain marinade into saucepan. Add Crisco and heat until melted. Brush rack of broiler pan with marinade. Arrange salmon steaks on rack. Brush with marinade. Broil 6 inches from heat for 12 to 15 minutes per side or until fish flakes easily. Brush fish generously with marinade several times during broiling. Arrange salmon steaks on bed of rice; garnish with lime slices and curled onion tops. |
