THE "RADICAL" PEANUT BUTTER PIZZA COOKIE Print E-mail
Makes 1 15-inch "pizza"

Cookie:
1 cup Butter Flavor CRISCO Shortening or 1 Butter Flavor Crisco Stick
1 -1/4 cups granulated sugar, divided
1 cup packed dark brown sugar
1 cup Jif Creamy Peanut Butter
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
2 cups all-purpose flour
2 cups quick oats, uncooked

Pizza Sauce:

2 cups milk chocolate chips
1/4 Butter Flavor CRISCO Stick or 1/4 cup Butter Flavor CRISCO all-vegetable shortening

Drizzle:

1 cup chopped white confectionery coating

Heat oven to 350ºF.

For Cookie
Combine 1 cup shortening, 1 cup granulated sugar and brown sugar in large bowl. Beat at low speed of electric mixer until well blended.
Add peanut butter, eggs, baking soda, vanilla and salt. Mix about 2 minutes or until well blended. Stir in flour and oats with spoon.
Place remaining 1/4 cup granulated sugar in small bowl.
Shape dough into a flattened disc. Sprinkle all sides with sugar. Place disc on 15-inch pizza pan and press out to fill pan, creating a "crust" on the edge.
Bake at 350ºF for 15 to 18 minutes. Do not overbake. Cool 5 to 8 minutes on baking sheet.

For Pizza Sauce
Combine chocolate chips and 1/4 cup shortening in large microwave-safe measuring cup or bowl. Microwave at MEDIUM (50%) 2 to 3 minutes or until chips are shiny and soft (or melt on rangetop in small saucepan on very low heat). Stir until smooth.
Spoon melted chocolate into center of cookie. Spread to inside edge. Sprinkle desired toppings over chocolate.

For Drizzle
Place chopped confectionery coating in heavy resealable plastic bag. Seal. Microwave at MEDIUM (50% power). Knead bag after 1 minute. Repeat until smooth (or melt by placing in bowl of hot water). Cut pinpoint hole in corner of bag. Squeeze out and drizzle over cookie.
Add "pizza toppings", cut into wedges and serve.

Mmmm: candy coated chocolate pieces
German Chocolate: chopped pecans and flake coconut
Cherries Jubilee: candied cherries and slivered almonds
Rocky Road: miniature marshmallows and mini semisweet chocolate chips
Harvest Mix: candy corn and chopped peanuts
Ants and Logs: cashews and raisins
