Makes 6 dozen1 cup Crisco Shortening 1 cup sugar 1 cup packed brown sugar 1-1/2 teaspoons vanilla extract 2 eggs 2 cups sifted all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 2 cups uncooked oats 1 cup flaked coconut 3/4 cup crisp rice cereal Preheat oven to 375ºF. Cream Crisco, sugars, and vanilla extract in a large mixer bowl. Add eggs, one at a time, heating well after each addition. Combine flour, baking powder, baking soda, and salt; add gradually to creamed mixture, mixing until blended. Stir in oats, coconut, and rice cereal. Drop batter by teaspoonfuls about 2 inches apart onto ungreased cookie sheets. Bake at 375ºF for 10 minutes. |
