QUICK AND EASY COCOA CAKE Print E-mail
9 servings

1-1/3 cups sifted cake flour
1-1/4 cups sugar
1/2 cup unsweetened cocoa
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup CRISCO shortening
2 eggs
3/4 cup milk
1-1/2 teaspoons vanilla extract
2 teaspoons vinegar

Easy Milk Chocolate Frosting:

2 tablespoons CRISCO shortening
2 tablespoons unsweetened cocoa
1/8 teaspoon salt
1-3/4 cups confectioners' sugar
2 to 3 tablespoons milk
1 teaspoon vanilla extract


Preheat oven to 350ºF.
Sift cake flour, sugar, cocoa, baking powder, baking soda, and salt together into a large mixer bowl. Blend to distribute cocoa. Add Crisco.
Add a mixture of eggs, 1/4 cup milk, and vanilla extract to dry ingredients. Beat for 2 minutes at medium speed (or beat vigorously by hand about 300 strokes); scrape sides and bottom of bowl occasionally.
Add mixture of remaining 1/2 cup milk and the vinegar to batter. Beat for 1 minute at medium speed (or beat vigorously by hand about 150 strokes). Turn batter into a greased 9 x 9 x 2-inch pan.
Bake at 350ºF for 35 to 40 minutes or until a toothpick inserted in center comes out I clean.
Remove from oven to a rack and cool completely in pan.
For Easy Milk Chocolate Frosting, combine ingredients in a small mixer bowl. Beat for 1 minute or until smooth and creamy. Spread frosting over cooled cake.
