Makes about 14 Jumbo Cookies1 cup quick oats (not instant or old fashioned) 1/2 cup Butter Flavor Crisco all-vegetable shortening or 1/2 Butter Flavor Crisco stick 1 cup Jif Creamy Peanut Butter 1/2 cup firmly packed brown sugar 1/2 cup granulated sugar 2 teaspoons orange juice 1 teaspoon vanilla 1 egg 3/4 cup all-purpose flour 1 tablespoon grated orange peel 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup peanut butter chips Heat oven to 300ºF. Spread oats on ungreased baking sheet. Bake at 300ºF for 5 minutes, or until toasted. Stir occasionally. Cool to room temperature. Heat oven to 375ºF. Grease baking sheet with Butter Flavor Crisco. Combine Butter Flavor Crisco, peanut butter, brown sugar, granulated sugar, orange juice and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Beat in egg. Combine flour, orange peel, baking soda and salt. Mix into creamed mixture at low speed until just blended. Stir in peanut butter chips and oats with spoon. Drop 1/4 cup of dough 3 inches apart onto baking sheet. Flatten slightly with greased glass. Bake at 375ºF for 10 to 12 minutes, or until lightly browned. Cool 2 minutes on baking sheet. Remove to cooling rack. |
