PENNSYLVANIA SHOO-FLY PIE Print E-mail
Makes One 10-inch Pie
8 Servings

Crust
10-inch Classic CRISCO Single Crust
Crumb Mixture
2 cups all-purpose flour
1/2 cup firmly packed brown sugar
1/3 cup butter or margarine, softened
Liquid Mixture
1 cup boiling water
1 teaspoon baking soda
3/4 cup plus 2 tablespoons dark molasses
2 tablespoons light molasses


For crust, prepare (see Crisco Classic Pie Crust recipe). Do not bake. Heat oven to 375ºF.
For crumb mixture, combine flour, brown sugar, and butter in bowl. Mix until fine crumbs form. Reserve 1/2 cup for topping.
For liquid mixture, combine water and baking soda in large bowl. Stir until foamy. Add dark and light molasses. Stir well until foamy. Pour into unbaked pie crust. Add crumb mixture. Stir slightly until mixed. Sprinkle reserved 1/2 cup crumbs on top. Bake at 375ºF for 30 to 40 minutes or until set. Cool until warm or to room temperature before serving.
