PEANUT BUTTER MONSTER COOKIES Print E-mail
Makes about 6 Dozen Cookies

2 jars (12 ounces each) Jif Extra Crunchy Peanut Butter
1 -1/4 cups Butter Flavor Crisco all-vegetable shortening or 1 1/4 Butter Flavor Crisco stick
2 cups granulated sugar
2 cups firmly packed light brown sugar
2 tablespoons vanilla extract
9 cups oats (Quick, uncooked)
3/4 cup self-rising flour
1 tablespoon plus 1 teaspoon baking soda
1 tablespoon baking powder
3/4 cup water
1 -1/3 cups semi-sweet chocolate chips


Heat oven to 350ºF.
Combine peanut butter, Butter Flavor Crisco, granulated sugar, brown sugar and vanilla in extra large bowl. Beat at medium speed of electric mixer or mix with spoon until well blended.
Combine oats, flour, baking soda and baking powder. Add to creamed mixture alternately with water, beginning and ending with dry ingredients. Stir with spoon until blended. Stir in chocolate chips. Shape into 1-1/2-inch balls. Place 2 inches apart on ungreased baking sheet. Flatten slightly.
Bake at 350ºF for 8 to 10 minutes or until light brown around edges. Cool 10 to 15 minutes on baking sheet before removing to foil.
