ORANGE GLAZED CAKE Print E-mail
One 2-layer cake
Prep time: 30 minutes
Bake time: 30-35 minutes

1 18.25 ounce Pillsbury Moist Supreme Class Yellow Cake Mix, Prepared with orange juice instead of water
1-1/4 cups sugar
5 tablespoons cornstarch
1/8 teaspoon salt
1 cup orange juice
1/4 cup water
Finely grated peel of one orange
Red and yellow food coloring (optional)

Frosting:

1 cup whipping cream
2 tablespoons sugar


Prepare Pillsbury Moist Supreme Classic Yellow Cake as directed, using Crisco Vegetable Oil and orange juice instead of water.

For filling, in small saucepan combine sugar, cornstarch and salt. Stir in orange juice, water and orange peel. Cook over medium heat, stirring constantly, until mixture thickens and becomes translucent, about 15 minutes. Remove from heat. Stir in food coloring. Cool.

Place bottom layer on serving plate. Spread with half of orange filling. Top with other layer. Spread remaining filling on top to within 1 inch of edge.

For frosting, in chilled mixing bowl whip cream until stiff, adding sugar gradually. Frost sides and remaining edge of top, leaving filling in center uncovered. Garnish with orange slices, if desired. Serve immediately or chill until ready to serve.
