Makes 5 dozen cookies1 -1/2 cups granulated sugar 1 cup Butter Flavor Crisco all-vegetable shortening or 1 Butter Flavor Crisco stick 1/2 cup molasses 1 egg 2 tablespoons whipping cream 1/2 cup applesauce 1 teaspoon vanilla 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon ground cinnamon 2 -1/2 cups uncooked quick oats 2 -1/3 cups all-purpose flour 1 cup chopped walnuts Heat oven to 350ºF. Place sheets of foil on countertop for cooling cookies. Combine sugar and shortening in large bowl. Beat at medium speed with electric mixer until well blended. Add molasses, egg and whipping cream. Beat well. Mix in applesauce and vanilla. Add salt, baking soda and cinnamon. Mix well. Add one ingredient at a time, oats, flour and walnuts. Mix well after each addition. Cover. Allow to stand 30 minutes to absorb moisture and flavor. Drop by heaping teaspoonfuls 2 inches apart onto ungreased baking sheet. Bake at 350ºF for 11 to 13 minutes or until lightly browned around edges and top is set. Do not overbake. Cool 1 minute on baking sheet. Remove cookies to foil to cool completely. |
