Makes about 6 Dozen Cookies 2 cups firmly packed dark brown sugar 1 cup Butter Flavor Crisco all-vegetable shortening or 1 Butter Flavor Crisco stick 2 eggs, beaten 2 teaspoons vanilla extract 2 cups all-purpose flour 1 -1/2 teaspoons baking soda 1 teaspoon ground cinnamon 1/2 teaspoon salt 3 cups (quick or old fashioned, uncooked) oats 1 cup raisins 1/2 cup chopped dates 1/2 cup chopped pecans Heat oven to 375ºF. Grease baking sheet with Butter Flavor Crisco. Combine brown sugar, Butter Flavor Crisco, egg and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Combine flour, baking soda, cinnamon and salt. Add gradually to creamed mixture at low speed. Beat until well blended. Stir in oats, raisins, dates and nuts with spoon. Shape rounded teaspoonfuls of dough into 1-inch balls. Roll in granulated sugar. Place 2 inches apart on greased baking sheet. Bake at 375ºF for 10 to 13 minutes or until golden brown. Remove to cooling rack. |
