| OATMEAL SHORTBREAD COOKIES |

Makes 4 dozen bars1 -1/4 cups sugar 1 cup Butter Flavor CRISCO Shortening or 1 Butter Flavor Crisco Stick 1 cup butter or margarine, softened 2 -1/2 cups all-purpose flour 1 teaspoon baking soda 3 cups uncooked quick oats Heat oven to 325ºF. Place cooling rack on countertop. Combine sugar, shortening and butter in large bowl. MIx until creamy. Combine flour and baking soda. Stir into creamed mixture. Stir in oats. (Dough will be very stiff.) Divide in half. Spread on bottoms of two ungreased 13 x 9 x 2-inch pans to within 1 inch of sides. Smooth and level surface with spatula. Bake for 40 minutes or until set. Do not overbake. Cut into bars about 2-1/4 x 2 inches while still warm. Cool until slightly warm before removing to cooling rack. Hint: When baking both pans of cookies at the same time, arrange on center rack so pans do not touch each other or sides of oven. If necessary to use more than one rack, stagger pans so one is not directly underneath the other. Rearrange pans halfway through baking time. |
