OATMEAL HONEY COOKIES Print E-mail
Makes 3 dozen cookies
Prep time: 10 minutes
Bake time: 10-12 minutes

CRISCO No-Stick Cooking Spray
1 cup Butter flavor Crisco-all vegetable shortening or 1 Butter Flavor Crisco stick plus additional for greasing
1 cup firmly packed dark brown sugar
1/2 cup honey
1/2 cup granulated sugar
2 tablespoons water
1 egg
1 -1/2 teaspoons vanilla
1 -1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
3 cups uncooked oats
1 cup raisins
1/2 cup coarsely chopped pecans


Heat oven to 350ºF. Spray baking sheet with Crisco No Stick Cooking Spray. In the bowl of an electric mixer, combine shortening, brown sugar, honey, granulated sugar, water, egg and vanilla. Beat at low speed until blended. Increase speed to medium; beat until light and creamy.

In a small bowl, combine flour, cinnamon, baking soda and salt. At low speed, gradually add flour mixture to creamed mixture. Mix until well blended. Stir in oats. Mix until well blended. Stir in raisins and pecans. Drop by heaping tablespoonfuls onto prepared baking sheet.

Bake for 10 to 12 minutes or until golden brown. Do not overbake. Cool 3 to 5 minutes on baking sheet. Remove cookies to rack to cool completely.

Note: For small cookies, drop dough by heaping teaspoonfuls onto greased baking sheet. Bake for 9 to 11 minutes. Makes 4 to 5 dozen small cookies.
