Makes about 3 Dozen Cookies1 -1/4 cups Butter Flavor Crisco all-vegetable shortening or 1 1/4 Butter Flavor Crisco sticks 3/4 cup firmly packed light brown sugar 1/2 cup granulated sugar 1 large, very ripe, banana 1 egg 1 teaspoon vanilla extract 3 cups oats (Quick or Old Fashioed, uncooked) 1 -1/2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1 cup semi-sweet chocolate chips 1 cup raisins 1 cup chopped walnuts 1/2 cup sliced almonds 1/2 cup flake coconut Heat oven to 375ºF. Combine Butter Flavor Crisco, brown sugar, granulated sugar, banana, egg and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Combine oats, flour, baking soda, cinnamon and nutmeg. Add gradually to creamed mixture. Beat until well blended. Stir in chocolate chips, raisins, nuts and coconut with spoon. Shape heaping tablespoonfuls into 1-1/2 ?to 2-inch balls with dampened hands. Place 3 inches apart on ungreased baking sheet. Flatten dough slightly. Bake at 375ºF for 12 minutes or until light brown. cool 2 minutes on baking sheet before removing to cooling rack. |
