| OATMEAL CAKE WITH BROWN SUGAR FROSTING |

One 9 x 9-inch cake3/4 cup boiling water 2/3 cup rolled oats 1/3 cup Butter Flavor CRISCO 2/3 cup packed dark brown sugar 1/3 cup granulated sugar 2 eggs 1 teaspoon maple flavoring 1-1/3 cups all-purpose flour 3/4 teaspoon baking soda 1/4 teaspoon salt Frosting: 1 tablespoon Butter Flavor CRISCO 3 tablespoons packed dark brown sugar 3 tablespoons half-and-half 1 to 1-1/2 cups confectioners' sugar Preheat oven to 350ºF. Grease and flour 9 x 9 x 2-inch pan. Set aside. In small bowl combine boiling water and oats. Let stand for 10 minutes. Meanwhile, in medium mixing bowl cream Butter Flavor Crisco, brown sugar, granulated sugar, eggs and maple flavoring until light and fluffy. Add oatmeal mixture, flour, baking soda and salt. Beat at low speed of electric mixer until blended, scraping bowl constantly. Beat at medium speed for 1 minute, scraping bowl occasionally. Pour into prepared pan. Bake at 350ºF for 30 to 35 minutes, or until wooden pick inserted in center comes out clean. Cool completely. For frosting, in small saucepan combine Butter Flavor Crisco, brown sugar and half-and-half. Cook over medium heat, stirring constantly, until mixture boils. Remove from heat; cool to lukewarm. Beat in powdered sugar to reach desired consistency. Spread on cooled cake. |
