NICOLE'S BANANA BARS Print E-mail
Makes 2 dozen bars

Base
2 cups firmly packed light brown sugar
1 cup Butter Flavor CRISCO Shortening or 1 Butter Flavor Crisco Stick additional for greasing
2 eggs
1 teaspoon vanilla
2 -1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 cups uncooked oats

Filling

1 can (14 ounces) sweetened condensed milk (not evaporated milk)
2 ripe bananas, sliced
2 tablespoons Butter Flavor CRISCO Stick or 2 tablespoons Butter Flavor CRISCO all-vegetable shortening
1 teaspoon granulated sugar
1 teaspoon vanilla
1/2 teaspoon salt


Heat oven to 350ºF. Grease 13 x 9 x 2-inch pan with shortening. Place cooling rack on countertop.

Base
Combine brown sugar, 1 cup shortening, eggs and vanilla in large bowl. Beat at medium speed with electric mixer until well blended.
Stir in flour, baking soda and salt. Stir in oats.
Reserve one-third of mixture. Press remaining onto bottom or prepared baking dish.

Filling
Combine condensed milk, bananas and 2 tablespoons shortening in medium saucepan.
Cook and stir constantly on low heat until mixture thickens and resembles banana pudding. Remove from heat.
Stir in sugar, vanilla and salt. Spread over base.
Crumble reserved oat mixture over top of filling.
Bake for 25 minutes or until golden brown. Do not overbake. Remove pan to cooling rack. Cool. Refrigerate. Cut into bars about 2-1/4 x 2 inches.
Note: Bars may also be served warm.
