| MANGO BREAD |

6 to 8 servings per loaf2 cups all-purpose flour 1-1/2 cups granulated sugar 1/2 teaspoon salt 2 teaspoons baking soda 1 teaspoon baking powder 1 teaspoon ground cinnamon 1/4 teaspoon ground ginger 3/4 cup Crisco Pure Canola Oil 3 eggs, beaten 2 cups fresh ripe mango, peeled and diced 3/4 cup golden raisins 3/4 cup macadamia nuts, chopped 1/2 cup grated coconut Heat oven to 350ºF. Spray two 9x5-inch loaf pans with Crisco No-Stick Cooking Spray. Dust with flour; set aside. Combine flour, sugar, salt, baking soda, baking powder, cinnamon, and ginger in large bowl. Combine oil, eggs, and vanilla in medium bowl; mix well. Fold in mango, raisins, nuts, and coconut. Pour batter into prepared loaf pans. Bake at 350ºF for 45 to 60 minutes or until wooden pick inserted into center of each loaf comes out clean and loaves are golden. Cool in pans 10 minutes. Turn out onto cooling rack; cool completely. |
