LUSCIOUS LEMON BARS Print E-mail
Makes 24 bars

Crust
1/4 cup CRISCO Oil
1/4 cup granulated sugar
1/4 teaspoon salt (optional)
1 cup all-purpose flour
1 -1/2 teaspoons skim milk

Filling

1 egg
1 egg white
1 cup granulated sugar
2 teaspoons grated lemon peel
3 tablespoons fresh lemon juice
2 tablespoons all-purpose flour
1/2 teaspoon baking powder

Drizzle

3/4 cup confectioners' sugar
1 tablespoon skim milk
1/2 teaspoon vanilla
1/4 teaspoon grated lemon peel


Heat oven to 350ºF. Oil bottom of 8-inch square pan lightly. Place cooling rack on countertop.

For Crust
Combine 1/4 cup oil, granulated sugar and salt (if used) in large bowl. Beat at medium speed of electric mixer until well blended. Add flour and milk. Stir with spoon until well mixed and crumbly. Spoon into pan. Press evenly onto bottom.
Bake at 350ºF for 15 minutes. Do not overbake.

For Filling
Combine egg, egg white, granulated sugar, lemon peel, lemon juice, flour and baking powder in medium bowl. Beat at high speed 3 minutes. Pour over hot baked crust.
Bake at 350ºF for 25 minutes or until light golden brown. Do not overbake. Remove pan to cooling rack. Loosen from edge while still warm. Cool completely.

For Drizzle
Combine confectioners' sugar, milk, vanilla and lemon peel in small bowl. Drizzle over top. Allow to stand before cutting into bars.
