| LEMON CHEESECAKE SQUARES |

Makes 24 squaresCrust 3/4 cup Butter Flavor Crisco all-vegetable shortening or 3/4 Butter Flavor Crisco stick 1/3 cup firmly packed brown sugar 1 -1/4 cups all-purpose flour 1 cup oats (quick or old-fashioned, uncooked) 1/4 teaspoon salt (optional) Filling 1/2 cup SMUCKER'S Red Raspberry Jam 2 packages (8 ounces each) cream cheese, softened 3/4 cup granulated sugar 2 tablespoons all-purpose flour 2 eggs 3 tablespoons lemon juice 2 teaspoons grated lemon peel Heat oven to 350ºF. Grease 13 x 9-inch baking pan. Crust Beat 3/4 cup shortening and brown sugar until fluffy. Add combined dry ingredients; mix well. Press onto bottom of prepared pan. Bake 20 minutes or until light brown. Do not overbake. Spread jam over hot crust. Filling Beat cream cheese, sugar and flour at medium speed of electric mixer until fluffy. Add eggs, one at a time, beating well after each. Add lemon juice and peel, mixing until smooth. Pour over jam. Bake 25 minutes or until set. Do not overbake. Cool completely. Chill. Store covered in refrigerator. |
