Makes about 2 Dozen Cookies1/2 cup Butter Flavor CRISCO 3/4 cup sugar 1 egg 1/4 cup buttermilk * 1/2 cup strawberry jam 1 teaspoon vanilla 1 cup all-purpose flour 1/2 cup unsweetened cocoa powder 1 teaspoon cinnamon 1/2 teaspoon baking soda 1/4 teaspoon nutmeg 1/4 teaspoon ground cloves 1 -1/2 cups quick oats (not instant or old fashioned) 1/2 cup raisins About 24 halves pecan (optional) Heat oven to 350ºF. Grease baking sheet with Butter Flavor Crisco. Combine Butter Flavor Crisco, sugar, egg, buttermilk, jam and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Combine flour, cocoa, cinnamon, baking soda, nutmeg and cloves. Mix into creamed mixture at low speed until blended. Stir in oats, raisins and chopped nuts with spoon. Drop 2 tablespoonfuls of dough in a mound 3 inches apart onto baking sheet. Repeat for each cookie. Top each with pecan half. Bake at 350ºF for 10 to 12 minutes, or until set. Cool 2 minutes on baking sheet. Remove to cooling rack. * You may substitute 3/4 teaspoon lemon juice or vinegar plus enough milk to make 1/4 cup for the buttermilk. Stir. Wait 5 minutes before using. |
