Makes 32 snacks2 tablespoons CRISCO Shortening, melted 1/2 cup whipping cream 1 teaspoon salt 1 teaspoon vanilla extract 1/4 cup sugar 4 eggs 3-1/4 cups all-purpose flour 1/4 cup cornstarch CRISCO Shortening for deep frying 1/3 cup sugar 1 to 2 teaspoons ground cinnamon Combine Crisco, cream, salt, vanilla extract, 1/4 cup sugar, and eggs in a bowl and beat thoroughly. Combine flour and cornstarch; add, about 1/2 cup at a time, to egg mixture, mixing until well blended after each addition. Chill thoroughly. Heat Crisco to 365ºF in a large deep saucepan or deep fryer. Divide dough into 32 equal portions and cover until ready to use. Roll rounds paper thin. Fry, one round at a time, in hot Crisco for 1 to 2 minutes or until golden brown; turn once. Drain over Crisco a few seconds, then remove to paper towels. Cool. Combine 1/3 cup sugar and the cinnamon. Sprinkle both sides of snacks with mixture. |
