Makes about 3 Dozen Cookies3/4 cup Butter Flavor Crisco - all-vegetable shortening or 3/4 Butter Flavor Crisco stick 1 cup firmly packed brown sugar 1 egg 1/4 cup plus 2 tablespoons SMUCKER'S Orange Marmalade 1/2 teaspoon vanilla 1 -1/2 cups all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 2 cups quick oats (not instant or old fashioned) 1/2 cup well drained, crushed pineapple 1/2 cup flake coconut Heat oven to 350ºF. Grease baking sheet with Butter Flavor Crisco. Combine Butter Flavor Crisco, sugar, egg, orange marmalade and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Combine flour, baking powder, baking soda and salt. Mix into creamed mixture at low speed until well blended. Stir in oats, pineapple and coconut with spoon. Drop rounded tablespoonfuls of dough 2 inches apart onto baking sheet. Bake at 350ºF for 10 to 12 minutes, or until edges are lightly browned and cookie is still soft. Cool 2 minutes on baking sheet. Remove to cooling rack. |
