HACK'S PRIDE OF KENTUCKY PIE Print E-mail
Makes One 9-inch Pie
8 Servings

Crust
9-inch Classic CRISCO Double Pie Crust
Filling
1 cup sugar
3 tablespoons all-purpose flour
1 teaspoon dried mint leaves, crushed
1/8 teaspoon salt
1 cup light corn syrup
2 whole eggs plus 2 egg yolks
1/2 cup sweetened condensed milk
1/3 cup butter or margarine, melted
3 tablespoons maple syrup
3 tablespoons sorghum *
2 tablespoons honey
2 tablespoons vanilla
1 cup pecans, soaked 2 to 3 days in 1 cup 80 proof bourbon, drained
3/4 cup black s walnut
1/4 cup semi-sweet chocolate chips


For crust, prepare (see Classic Crisco Pie Crust recipe) and press into 9-inch deep-dish pie plate. Do not bake. Reserve dough scraps for cut outs, if desired. Heat oven to 350ºF.
For filling, combine sugar, flour, mint and salt in large bowl. Add corn syrup, eggs, egg yolks, condensed milk, butter, maple syrup, sorghum, honey and vanilla in large bowl. Mix well, Stir in nuts and chocolate chips. Spoon into unbaked pie crust.
Bake at 350ºF for 50 to 70 minutes or until center is set. Cool toroom temperature before serving. Garnish with baked pastry cutouts, ifdesired.

*If sorghum is unavailable, substitute dark molasses.
