FLAKY WAFER COOKIES Print E-mail
Makes 3 dozen cookies

2 cups all-purpose flour
1/4 cup confectioners' sugar
1/4 teaspoon salt
2/3 cup Butter Flavor Crisco or 2/3 Butter Flavor Crisco stick
3 to 4 tablespoons half-and-half
2 egg yolks
1 teaspoon vanilla
1 recipe Basic Cookie Frosting


In large mixing bowl combine flour, confectioners' sugar and salt. With fork or pastry blender cut in Butter Flavor Crisco to form fine particles. In small bowl combine 3 tablespoons half-and-half, egg yolks and vanilla. Sprinkle over flour mixture, mixing until particles are moistened. If needed, add tablespoon half-and-half. Form dough into 2 balls. Wrap each in plastic wrap and refrigerate for at least 1 hour.
Preheat oven to 400ºF. Roll dough 1/4 inch thick on lightly floured board. Cut into 1-1/2- to 2-inch shapes. Prick cutouts with fork. Place on ungreased baking sheet. Bake at 400ºF for 8 to 10 minutes, or until edge is light golden brown. Remove to cooling rack. Frost with Basic Cookie Frosting.
