FILLED STAR COOKIES Print E-mail
Makes 3 dozen

2 cups CRISCO all-vegetable shortening or 2 CRISCO Sticks
1 cup sugar
1-1/2 teaspoons vanilla extract
3 egg yolks
1/3 cup orange juice
4 cups all-purpose flour
1/2 teaspoon salt
SMUCKER'S Preserves or Jam for filling, any flavor
Confectioners' sugar


Cream Crisco, sugar, and vanilla extract. Beat in egg yolks and orange juice. Combine flour and salt; mix in 2 cups at a time until dough is soft; add more flour if needed.
Wrap in waxed paper or plastic wrap. Set in refrigerator overnight.
Preheat oven to 350ºF.
Roll out chilled dough to about 1/4-inch thickness on a floured surface.
Use a star cutter to cut out star shapes. Put stars on ungreased cookie sheets. With thimble or tiny round cutter, cut out 5/8-inch centers from stars; reserve scraps of dough.
Bake at 350ºF for 10 to 12 minutes.
Gather scraps of dough into a ball and chill if necessary. Roll out dough to 1/4-inch thickness.
Cut out stars and put onto ungreased cookie sheets.
Bake at 350ºF for 10 to 12 minutes.
When cool and ready to serve, spread Smucker's Preserves or Jam on plain stars, then top with remaining stars. Sift confectioners' sugar over tops.
