Makes about 4 dozen cookies1 cup Butter Flavor Crisco all-vegetable shortening or 1 Butter Flavor Crisco stick 2 cups confectioners' sugar, divided 2 teaspoons vanilla 2 cups all-purpose flour 1/2 teaspoon baking soda 1/8 teaspoon salt 2 cups finely chopped walnuts Heat oven to 350ºF. Combine shortening, 1 cup confectioners' sugar and vanilla in large bowl. Beat on medium speed with electric mixer until well blended. Combine flour, baking soda and salt in medium bowl. Add to creamed mixture; mix well. Stir in walnuts and mix well. Roll dough into walnut-size balls and place on ungreased cookie sheets about 1-1/2 inches apart. Bake at 350ºF for 15 minutes or until edges begin to brown slightly. Cool on cookie sheets until cool enough to handle, but still warm. While still warm, roll in remaining 1 cup confectioners' sugar; place on cooling racks to cool completely. |
